I usually have 2 or 3 projects going at once. If I get bored with a story or a character, I’ll switch gears and pick up one of my other projects. That way, when I go back to a work that I got tired of, I find new interest in it. Good luck!

Maybe you get fed up writing about horses.
Write about something completely different, and then you can go back to horses if your new subject doesn’t work for you.

Write in smaller blocks. Take a fairy tale or short story you read and create your own characters and add your own flair but in essence stick to the format. I’m not saying plagiarize or copy but use it as a structure. All romance is based on one single premise ‘Boy meets Girl’. Fantasies are a triumph of good over evil or a quest of some type. Chick Lit and Women’s lit are all about one woman facing some obstacle and over coming it. Urban fiction is about life on the streets, drugs, aids, prostitution, guns, clubs, cars, etc. Paranormal is ghosts and other supernatural beings. They can fall in love, have a quest, defeat evil, save the world. Mystery is a murder or other crime and an attempt to solve it.
No matter what you write try keeping to a formula at first. You make it your own by the style of writing. Do you use formal English, historical settings, small towns, westerns, urban drama, apocalyptic earth, slang, fashion, mythology. The story of Bellerphone is about him going after the Chimera and the amazons on his winged horse Pegasus. You could use your knowledge of horses in a similar story and then tack on a plotline such as a romance, or bringing the animal together with others of it’s kind so they can breed as there are only a few left.
Ideally you start small, one short story then another and a third. Link them together through the myth you’ve created.

Gail Carson Levine (author of Ella Enchanted) says that when she doesn’t know what to write, she writes junk. Anything that comes into your head, like “My finger hurts”, or “My pet cat is sitting on my keyboard”, or whatever! Eventually you’ll get so bored that your mind will start making up story ideas on its own.
